Review: Berkshire Rack of Pork
We finally enjoyed our rack of pork from Berkshire Meats in Minnesota. I was less than excited about it. It had been in the freezer since June and I just wasn’t in the mood. I set the menu for a breadcrumb herb crust for the pork and acorn squash rings cooked in orange juice. Parker House Rolls and Frozen peas as accompaniments.
I have got to tell you that this pork was the BEST I’ve ever eaten. (Jack agrees!) Succulent, flavorful, almost so tender you could cut with a fork – or at least no fancy steak knives were needed. Absolutely fantastic! The pork chops we got when we ordered were good but no way near this good. I roasted the rack (8+ ribs) cut into 2 - 4 rib roasts for easy managing. I roasted at 350°F degrees after a quick stovetop sear. It seemed like it took forever to get the roasts to 155°F which is where we removed them from the oven. It realistically took about 2½-3 hours to roast them. I put them in about 4:30ish and we pulled them out about 7:15. If we are satisfied after doing some research on their farming techniques - we’d definitely order from them again.
