Potato Puree (with chives) with Osetra Caviar - The puree almost had a tapioca texture to it.

2002 Solter Brut Sekt


Coriander Scented Pancetta Crenshaw and Charentais Melon
Melon not quite ripe enough for us. (What's up with that?! Inexcusable, as they are in-season. - Jack) Didn’t detect the coriander. Pairing okay but not exciting. This dish brings out herbs in the Schäefer.

Butter Poached Maine Lobster & Sautéed Foie Gras White Corn Belini and Golden Peach Reduction
Lobster partly underdone. Corn Bellini is distracting and overwhelms lobster. Foie really good - nice crisp crust. Peach slice is a nice accompaniment. Foie did not excite Jack.

Lavender Smoked Sonoma Duck Breast, Bing Cherry Essence
Served with potato cubes and baby turnips - the turnips were great. Some potato cubes were crispy - others not. The crispy ones were great. Lavender was a great choice for the duck. The duck really had wonderful flavor and was a great match with the wine.

2002 Kesseler Cuvée Max Spätburgunder QBA


Artisanal Cheese Selection:
Crater Lake, Cow’s Milk Blue (9 months old from Oregon) - Even too salty for the ‘99. Very salty and slightly blue - not a strong blue.
Achadina Capricious (3 months old semi-firm goat’s milk from Petaluma) Goaty but salty and balanced. I like this cheese.
Everona (Raw Sheep’s milk aged 1 yr.) - A sheep that doesn’t appeal. Rustic and salty.
Served with Della Fattoria currant walnut toasts, Fresh black figs, grapes and marcona almonds.

Caramelized Nectarine Tart Madagascar Vanilla Bean Creme Brulée, Frangipane, Caramel Ice Cream
Tart pastry is tough. Brulee part is great. The hard sugar top varied widely in color from pale golden to dark brown. Where was the Frangipane? Peaches on bottom overwhelm.
