Pork Minestrone Recipe

2 bunches carrots – about 10
16 cups Ham/Vegetable Stock made with smoked ham hocks
5 ribs celery
1 small and 1 large cabbage rough chopped about 8 cups
1 cup fresh peas
1.5 pounds fresh ground pork
5 small leeks
1 red onion
1 16oz can or 2 -3cups tomatoes diced
3 cloves of garlic
meat from ham hocks
1 small bunch greens - like dandelion
Parmesan Reggiano and Crusty Bread.

Cook ground pork and drain fat.

Saute carrots, garlic, onion and celery in olive oil until soft. Add pork, reserved ham and tomatoes and combine. Add ham stock. Bring to a boil then simmer 10-20 minutes. Add cabbage simmer 10 minutes. Add greens and peas simmer until softened but not brown.

Serve with grated parmesan.
